Happy Friday! That means cocktails here at The Lazy Bride and today we’re sipping the Cuban classic, the Mojito. It seems deceptively simple, with only five ingredients but finding a really good mojito is akin to looking for the Holy Grail. Some of the best I’ve had were found in Havana, Cuba which is not surprising, considering the Mojito was born here. The word comes from the African word, “mojo” which means “little spell”. A couple of well-made Mojitos and you’re bewitched for sure. These are easy drinking cocktails that are refreshing, light and perfect for a summer wedding.
The Classic Mojito
2 oz of good quality white rum
2 teaspoons sugar
6 – 8 fresh mint leaves
1 lime cut in half
Muddle the sugar, mint and a splash of Club Soda in a highball glass until the sugar dissolves. Squeeze the juice from both lime halves into the glass (don’t squeeze too much or you’ll get some bitterness) then drop one half into it. Add rum. Stir well. Add ice cubes and top up with Club Soda. Garnish with a touch of fresh mint and lime (if you’re super fancy, toss in a stalk of fresh sugar cane as a stir stick).
