Ah, Spring, when a young man's fancy turns to romance and refreshing libations (or something like that). And this little number would be the apple of everyone's eye if served as a signature cocktail at a Spring wedding. Fresh, seasonal herbs add an unexpected taste twist while the gin and soda provide a cool kick.
Lemon Verbena Spring Fling
1/2 cup fresh lemon verbena
juice from 1/2 fresh lemon
2 tbs simple syrup
2 oz gin (Tru2 Organic Gin highly recommended as it balances perfectly for this drink)
club soda
crushed ice
lemon wheel for garnish
Muddle the first three ingredients in a collins glass (the tall one). Add gin and then crushed ice (which will keep the leaves from annoyingly getting into your mouth). Top with club soda and garnish with lemon wheel. Enjoy!
