A very happy Friday, especially to my American friends gearing up for the first long weekend of the summer. Or should that be the 'wheeeeee! kend'? Today's drink is non-alcoholic, so great for lounging around on the deck or serving as a welcome cocktail at the wedding. It's not quite a mojito (and having done the 'Hemingway Passed Out Here' mojito tour of Havana, I feel somewhat qualified to judge) but it's a passable facsimile. All in all, a nice, refreshing drink for any time of the day.
Mock Mojito
4 or 5 springs of fresh mint
1 lime
1 oz. simple syrup
6 to 8 oz. soda water
lime wedges
Muddle the mint (reserve one sprig for garnish) with the simple syrup in the bottom of a tall glass. Add ice cubes. Squeeze half of one lime into the glass, reserving the other half for garnish (slice it into three or four wedges). Top with soda water. Stir, drop in lime wedges, and decorate with the last sprig of mint. Salut!
Never did the Hemingway tour in Havana, so I’m missing some rum!!! Happy weekend to you too, from one of us in the States!!!
