Cocktail Friday – Pimm’s Olympic Cup

Pimm's Cup Cocktail
Pip, pip and rule Britannia! The Olympics in London are about to start so what better way to celebrate than with a classic British cocktail, the Pimm's Cup (renamed Olympic Cup for today). Nothing is as resfreshing as one of these slightly fruity libations on a hot summer day. And they are a great idea for a specialty cocktail at your wedding or bridal shower – sure to be a big conversation starter!

Pimm's No. 1 is the 'secret' ingrediant to these delectable babies – a blend of gin, spices and fruit extract that is truly unique. Oh so British but now found across the pond in better liquor stores and specialty food marts. Make up a batch, turn on the telly and cheer on your favourite athlete. Bottom's up!

Pimm's Cup Cocktail

Yields 1 – 12 oz glass

  • 6-8 ounces of ginger ale
  • 1-1/2 ounces Pimm's No. 1

  • 1 slice lemon
  • 1 slice lime
  • 1 slice orange
  • Ice cubes

  1. Add the fruit and cucumber slices to a tall, 12-ounce glass and press down on them just slightly with the back of a spoon to release a little of their juices.
  2. Add ice cubes to about two inches below the top of the glass.
  3. Add the Pimm's No. 1, then top with ginger ale.
