Prepping for my assistant's bridal shower tomorrow and was hunting around for a colourful, tasty cocktail and lo and behold, I found the Strawberry Basil Margarita over at The Blue Jean Gourmet. Looks delish and with an interesting flavor combo. Check back next week for photos from Caren's shower!
Strawberry Basil Margaritas
(serves 2)
2 oz tequila
juice of 2 limes
splash of Cointreau
2 tablespoons basil, roughly chopped
1/2 cup strawberry simple syrup *
*(1 cup sugar, 1 cup water, 4 -5 strawberries sliced – combine all ingredients in saucepan, bring to boil, simmer 10 – 15 minutes, cool then strain and store in jar in fridge up to 2 months)
Place basil in the bottom of cocktail shaker and add tequila. Muddle to mash the basil leaves into the tequila. Fill shaker with ice, add strawberry syrup, lime juice and Cointreau. Cover, shake and strain into glasses. Garnish with sliced strawberries and chiffonade (ribbons) of basil.
