Nothing says 'tropical' like a rum-based drink in a giant coconut (well, in this case, a giant 'pipa' or green coconut). Here's a recipe for one of our favourite specialty cocktails for a beach wedding. Fun, fruity and refreshing.
1/2 oz Amaretto
1 1/2 oz light rum
1 oz Cream of Coconut
1 tsp grenadine
dashes of milk
1/2 oz unsweetened pineapple juice
Combine all ingredients in a blender with 1/2 cup ice until smooth. Serve in a hollowed out green coconut (or wine glass).
